Greek food is one of my favorites! There is not much better than falafel wrapped in warm pita bread. And HG definitely knew what she was doing here! Yum!!!
I made a couple of mistakes when making these...
1. My kids (6 & 4) begged to help, I couldn't say no. Even though this made preparing the recipe difficult and it's not a difficult recipe. Having 6 hands trying to do one thing is sometimes very annoying, especially when you are trying to get dinner on the table. I need more patience. Stat!!!
2. I planned on making this last week. I couldn't find whole wheat pitas, so I bought whole wheat Flat Out bread. Which did not make it through the week. It was covered in mold when I went to assemble the pitas. Doh!
I made one change...
I love crispy fried fat laden falafel! In this recipe they are baked. So I decided to use HG's nifty little faux frying trick which the recipe doesn't call for.
And only ran into one problem (besides the molded Flat Outs)...
I think that I didn't cut the onions small enough because when I went to mash everything together with a potato masher, I broke my masher. I put it all into the food processor and it turned out perfect. I'll definitely just stick all of the ingredients in the food processor next time. Much easier and less mess.
My overall opinion on this recipe is that it is great! I loved it. The sauce is great! I love that it has dill. Oh, and I used Greek yogurt instead of regular plain. Next time I make this, I will also make a batch of Taboulleh and stuff it all into a pita or wrap together.
