Chicken Pot Pockets

Yum! Comfort food and a crowd pleaser.

These were very simple to make. My whole family loved them. That is a rare thing these days...for my kids to like anything that I make, something is always wrong and there is a reason that it is just too gross to eat. These nifty little pockets are not only delicious but also fun to eat.

I made a little change: I added a little poultry seasoning and thyme. I should have added a little salt.

One problem: The problem is not the taste, they are very good. It is the portion. I ate 4 of these and my 4 year old that barely eats ate 2. I didn't look at the Weight Watchers points for these, but I'm sure eating 4 was probably way to many since the serving size is 1. I was in a hurry and thought that since this recipe has it all (Veggies, protein, carbs) that a side dish wasn't really necessary. Our family of 4 ate all 12.

So if this is a recipe that you decide to try my recommendations are to add a little salt and make a couple of filling side dishes.

Nacho-rific Stuffed Chicken

This is the third time I have bought the ingredients for this recipe and the chips never make it through one day in my house. I saw my son with the bag of chips this afternoon and took them and decided that I'd better make it tonight or I'd be buying ingredients a fourth time.

This chicken sounded so good. It's stuffed with refried beans and two types of cheese and then it's faux fried with Fiber One, baked tortilla chips, and seasonings. I used baked Doritos...Doritos are always a good choice.

It was easy to make but a little messy. I'm not a fan of handling raw chicken too much. And this had to be pounded thin and then filled, rolled, and dipped. It did go together quickly though, it took maybe 45 minutes to prepare including cooking time...not bad.

My husband and I agreed that this is a great chicken recipe base. It is a little bland. It would be wonderful though with some fresh pico de gallo.

Falafel Pita Pockets with Dill-icious Yogurt Dip

Greek food is one of my favorites! There is not much better than falafel wrapped in warm pita bread. And HG definitely knew what she was doing here! Yum!!!

I made a couple of mistakes when making these...

1. My kids (6 & 4) begged to help, I couldn't say no. Even though this made preparing the recipe difficult and it's not a difficult recipe. Having 6 hands trying to do one thing is sometimes very annoying, especially when you are trying to get dinner on the table. I need more patience. Stat!!!

2. I planned on making this last week. I couldn't find whole wheat pitas, so I bought whole wheat Flat Out bread. Which did not make it through the week. It was covered in mold when I went to assemble the pitas. Doh!

I made one change...

I love crispy fried fat laden falafel! In this recipe they are baked. So I decided to use HG's nifty little faux frying trick which the recipe doesn't call for.

And only ran into one problem (besides the molded Flat Outs)...

I think that I didn't cut the onions small enough because when I went to mash everything together with a potato masher, I broke my masher. I put it all into the food processor and it turned out perfect. I'll definitely just stick all of the ingredients in the food processor next time. Much easier and less mess.

My overall opinion on this recipe is that it is great! I loved it. The sauce is great! I love that it has dill. Oh, and I used Greek yogurt instead of regular plain. Next time I make this, I will also make a batch of Taboulleh and stuff it all into a pita or wrap together.

I only planned the dinners. I have lots of ingredients for the breakfasts in the book. I'm not sure which ones I'll be using yet.

Sweet & Sour Chicken 1-2-3

This recipe is very tasty. I left out the celery, it called for a cup and we just don't care for celery that much. The rest of the recipe I followed.

I served it with brown rice and it was very filling. My kids loved that it had pineapple. It makes 3 servings, so it was perfect for us. It's not quite the same as sweet and sour chicken that you would get at a restaurant, but pretty close. And thinkng about the difference in fat and calories between the two, makes this one great!

The only problem that I had with the recipe (totally my fault, I should have known better) is that there was quite a bit of liquid in the wok before I put in the sauce. I should have poured the liquid off. Since I didn't, the sauce tasted a little weak and was runny.

PB & Chocolate Oatmeal Blitz

Who eats chocolate oatmeal? Seriously, I would have never in a million years thought of chocolate oatmeal. But after trying this, I will never again eat the little packets of flavored oatmeal.

My first thoughts on this recipe are...Oh my! This is even tastier than the S'mores oatmeal. It is very chocolatey and peanut buttery! My favorite food combo! I made some for a snack last night before bed. Silly me, I only made one serving and the whole family wanted it.

This oatmeal recipe is for a single serving but it's super simple to make a big batch of for the entire family.

Thanksgiving Turkey Sandwich

I was so excited to try this recipe. My most favorite meal of all is turkey and dressing with all of the trimmings...I seriously could eat this meal every single day. And this recipe has it all, turkey, dressing, gravy, and cranberries.

This was not one of my favorite recipes. But that being said, it more than likely was because of the deli sliced turkey that I used and the brand of light bread that I used always tastes a little bitter to me. I will try this recipe again and encourage everyone to try it. Next time I will use Carving Board Turkey lunch meat (I can't remember who makes it, but it's thick slices like you would actually cut from a turkey). And maybe light white bread instead of light whole grain. Or I may even just skip the bread all together and eat a whole grain roll on the side.

S'mores Oatmeal

The day I got this cookbook in the mail, I was looking through it with my 4 year old. She was the first to spot the picture of this recipe and said that she wanted to try that. And Oh my Lands...is it a great one. Who doesn't love the combo of chocolate, marshmallows, and graham crackers. It is so indulgent tasting. But low fat and low calorie. I'd have never thought to put this combo together into oatmeal.
It's definitely going to be a keeper!

Pepperoni-Poppin' Veggie Calzones

YUM!!! Possibly one of my favorite recipes ever! Only 2 problems with this recipe, I can't figure out how to cut them into 5 so I cut them into 6, and they are so incredibly delicious that I want to eat every one.

One of the many things I love about Hungry Girl is that she uses things that you normally would not think to use. I would have never thought of using crushed tomatoes instead of pizza sauce but, wow, I'll never use pizza sauce or tomato paste again for pizza or calzone. And instead of having a big ole bag of shredded part skim mozzarella, where it is so easy to put much more in than the recipe calls for, you use light string cheese. Who would have thought?

This recipe is wonderful. Who knew you could eat calzone and not feel guilty about it.

Introduction

Hi, My name is Heather. And I am slightly obsessed with Hungry Girl...Okay, a lot obsessed (She has changed the way I cook and my outlook on food, so how could I not be?) I stumbled across one of her cookbooks a couple of months ago after starting Weight Watchers. I must admit that my Weight Watchers journey was short lived...as each diet I've ever tried has been. But my love for Hungry Girl has remained. The recipes in her books are great. Not to mention easy and quick. As a mom that is very important. I love that I can make foods like onion rings, pizza, and nachos that are not only great tasting but also low fat. Not only has Hungry Girl changed the way I cook, but she has also introduced me to some wonderful products that I would have never known of otherwise. For instance Shiritaki Noodles, Vitatops, and using Fiber One Cereal to faux fry food.


On this blog it is my goal to try every single recipe in her newest book...300 under 300, and give an honest review of each recipe. I've not tried a recipe that I have not liked of hers yet (even my kids and husband love them). But this will give me a chance to do something I have never done, that is try every recipe in a cookbook. So this is my challenge. I am skipping through, not going page by page. The ones that interest me will be the ones that I use first. Thank you for reading about my HG cooking journey.
